Résumé

We are currently attending a culinary tourism appreciation by several Spanish regions. In the case of Asturias, where the cuisine enjoys significant recognition, the Administration has been promoting this sector in recent years through various policies and strategies, and now, through several courses of action, is to strengthen this tourism model. To provide information relevant to the design of such actions, building up the tourism demand’s data collected by the Tourist Information System of Asturias (SITA) over the year 2008, this study analyzed spending tourism habits as many variables of interest, such as the origin of the visitor, the type of accommodation, year of travel, or mode of travel, thus making a typology of tourism based on the budget for food.
